Caught by Cornish inshore fishermen, especially in autumn and winter, using jigs or light trawls. It is a highly prized seafood: tender, mild, and slightly sweet when cooked. The best ways to serve squid is grilled, fried (as calamari), or stuffed preparations. Best when cooked very quickly or very slowly to keep the flesh tender.
