Monkfish Romesco

Ingredients:

 • 200g Monk 

• 2 cloves of Garlic, finely diced 

• 1 tbsp Paprika 

• 2 tsp dried Tarragon 

• 1 Lemon, juiced 

• 50ml white wine 

• 2 tbsp Olive oil 

• Pinch of Black pepper & Sea salt 

• 6 Spring onions, charred 

• 1 roasted Red pepper 

• 50g Romesco sauce 

• Parsley to garnish 

Method:

 1. Marinade your monk for at least 2-3 hours in paprika, garlic, lemon, tarragon and oil. Cook in a hot non-stick pan and deglaze with white wine. Serve on a generous spoonful of romesco sauce with charred spring oninos and a roasted red pepper. Season to taste.
