Grilled mackerel with olives and asparagus

  • 2 whole mackerel, gutted
  • 8 stems of asparagus
  • 2 tbsp olive oil
  • 2 tbsp green olives
  • 1 tsp capers
  • 1 tbsp breadcrumbs
  • 1 tbsp pine nuts, crushed
  • 1 tsp sea salt
  • Lemon juice to serve



  1. Preheat you BBQ or pizza oven until it is hot at around 200˚C and prepare a roasting tray or grill basket with a bed of sliced asparagus, olives and capers. 
  2. Score the fillets of your mackerel with a shallow slice down the length and sprinkle with your breadcrumb and pine nut mix. Then drizzle the entire roasting tray with olive oil and a generous pinch of sea salt.
  3. Roast for 10-15 mins until the fish is cooked through and the vegetables start to char. Drizzle with lemon juice and serve with a potato salad or some green leaves.
